... is a pain in the rump.

Before you go replacing the sensor remove it and clean it first and refit and see if that fixes it (mine was caked in crap) If it still doesn't work then replace it (i replaced mine regardless) there is very little space to actually get to it with the diff in situ but it can be done with a 10mm spanner and kama sutra fingers :)

The new sensor actually makes the speedo needle move more smoother rather than jerky/not smooth (which i can see now is a sign of it getting knackered).

Glad you sorted it , did you take the opportunity to change the diff oil at the same time ?

I had an inspection 2 done last year which included them replacing the oil for everything (engine, AT, diff etc) if i remember correctly i also asked them to change the brake fluid and the coolant which needs doing every 2 years so i was told. I have a service coming up soon so i will verify if everything is ok then if not they can replace it at the same time.

How often does the diff oil need changing and the gearbox for that matter?

According to my service book the gearbox oil and final drive oil should be replaced at every inspection 2.
