high revs when starting

   just checking over car before i look at replacing engine have picked up on couple of points need sorting before i decide on new engine 
when started when cold car revs hard then settles to tick over
car vibrates badly at various speeds 40 60 70 
and could the water valve be what is causing constant head gasket problems dont want to change engine then blow head gasket due to problem water valve 
indy put car on scanner o2 sensors are knackd any idea which ones i want as ecp have several
sorry car is 96 e39 528
