A friend of mine is considering buying an E30 325i.......he has quizzed me on the E30 325iM that you may have seen about........I realise the only 'true M' E30 is the LHD 4 pot........but what mod's (if any) does this 325iM possess??

You are correct that the only true M in the E30 was the M3. There is no 325iM so I assume they are referring to an M-technic styled 325i which would have uprated suspension and a bodykit. (It is really just a fancy 325i). It may also have the M-tech 3 spoke steering wheel. Other than that it is pretty much the same as your average 325i.
There is also a 325iS out there which has an LSD and a sporty interior but other than that is much the same.
