I used to run an 02 in the Kumhos fitted with twin Weber 50DCO sidedraughts...
Carbs are no problem at all to get, but you may want to run 45DCOE or 48DCOE rather than 50s for the road....Unless you intend to have 8500+RPM rev limit, of course..
Mangoletsi used to do a manifold..or you could find a genuine one from a 2002Ti (the standard carbs were Dellorto 45s)... I had the manifold, head and carbs polished and matched at a local engineering shop to get the best possible air-flow.
The linkeage was an aftermarket twin-cable jobby...needed a bit of fabrication to make it fit the bulkhead and the pedal, but nothing too hard...
The only issue I had was that the 50DCOs have no choke or cold start device (the DCOE versions do have that, though) and that made it a bit of a pig to start on cold days!
As for cheap: well, the manifold cost around £120...but that was 10 or 12 years ago, at least! The carbs aren't vastly expensive to get new (around £600 a pair) and new guarantees they aren't gonna need lots of overhauling...
However, plenty of scrappies have cars that would have been fitted with webers from new..and plenty pop up on eBay, also...
Linkeage should add about £75 and, if you want the polishing and machining, then another £150 or so should cover it...
